Marshmallow Eggs

Making marshmallow eggs for Easter has been a family tradition since I was a child and that was years ago. I remember making them with my mom and now I am making them with my grandkids. While in AZ last week we made them with Carrie and Kimie’s kids. It was lots of fun and the kids loved it.



First make the molds by pressing an egg into a pan of flour. I use cake pans, casserole pans, what ever I have. If using a real egg you get 36, we used larger plastic eggs and got 24. This is a part the kids can help with.


Mix together cold water and unflavored gelatin. Set aside.











Combine hot water, 1/2 cup corn syrup and sugar in pan. Cook to soft ball. I use the cold water test which is add a small spoonful into cold water and when it is set up to a soft ball then it is ready.


Remove from heat. Add remaining corn syrup, beat adding gelatin.


Beat well for 10 Min. Yes really 10 min. I set a timer so I know it has been long enough. It will turn a creamy color and start to thicken.'


Pour into molds. Let sit till next day to set up completely.


The next day they are ready to dip!

First take the eggs out of the flour molds and shake off the excess flour. Set on a thin layer of flour fi not they will stick to whatever you put them on.


We used melted chocolate chips, you can also use dipping chocolate. I melt it in the microwave on 70% power 1 min at a time stirring at the end of each till it is melted. Don’t over melt or it will ruin it. I usually have a few small chunks that melt as you stir it.

Lay the egg in the chocolate and cover completely with chocolate. Using a fork lift it out of the chocolate and tap it gently letting the excess chocolate drip off. Set on wax paper.
 

Decorate with sprinkles or how ever you would like. We have used colored chocolate to do stripes and also wait for the chocolate to set up the pipe a flower on top. Today we did sprinkles so the kids could do it. Then you just need to wait for the chocolate to set up and enjoy.
