I am finally coming out of hibernation and contributing to the blog again. We are still trying to get unpacked, which has become quite a chore with two little ones "helping" but are now feeling more at home in our new home.
A couple of weeks before Christmas we were preparing to attend our church Christmas Party. In church they asked that those who could, please bring a salad or dessert. We were running errands all day and ended up back at home about 30 minutes before the party started... I was frantic to come up with something to take. After checking out a couple of cookbooks, I was more frustrated than ever. Then the thought came to me, How about an Egg Nog pie!?! So, I started pulling ingredients out of the refrigerator and cupboard, and threw it together. It turned out to be pretty fantastic!
Start by gathering your ingredients:
1 pre-made graham cracker crust
1 small container cool-whip
1 large box vanilla pudding
Egg Nog
pumpkin pie spice
nutmeg
pour the contents of the pudding into a bowl.
add 2 cups of egg nog, and a pinch of nutmeg
whisk it until it becomes thick, then fold in half of the container of cool-whip

Pour it in the pie shell
spread it out evenly and make it beautiful
With the remaining cool whip, put it in a piping bag with a large star tip and decorate it however you'd like
almost done
sprinkle the top with a light dusting of pumpkin pie spice and chill for about 20 minutes or until firm.
This pie was a huge hit! So yummy, and we didn't bring home any leftovers... My dear husband is already requesting it for every holiday that egg nog graces our store shelves... which in Utah, are quite a few.
