Halloween Chips

A few years ago I was making dinner for a neighbor that had just brought home baby number 2.  She already had a toddler at home and since the focus tends to be on new baby, I wanted to come up with something fun for her.   It was close to Halloween so I took my family’s tortilla recipe and created Halloween Chips.  


You start with a recipe for tortillas:
4 cups white flour – or 3 cups white flour and 1 cup whole wheat flour
1 teaspoon Baking Powder
½ teaspoon salt
¼ cup canola oil
1 ½ cups warm water

In a large mixing bowl, combine all of the ingredients.  Mix together with your hand and add more water if needed into the dough until it forms a solid ball but is not too sticky. 
 At this point you will want to decide what color/colors to use for your chips.  I used orange to make pumpkin chips.  Add your food coloring and knead the dough for 5 minutes to mix the coloring in.
Roll the dough out on a clean surface; you don’t need to flour the surface.  The thinner you roll it the crispier your chips will be. 
Use cookie cutters to cut out your chips. 

Using a metal spatula, place them on a greased cookie sheet and bake at 400 for 10 minutes.  Turn them over and bake for 2 more minutes.  If you like salty chips, brush them with water and sprinkle with salt BEFORE you bake them.
                                                                                                                    
Then serve with your favorite salsa or dip and enjoy. 
I served these with a Black Bean and Corn Salsa:

1 can black beans, drained
1 can corn, drained
½ green pepper, chopped
3 tomatoes, chopped
1 jalapeño minced – you can use more or less depending on how hot you like it
2 T lime juice
1 tsp cumin
Salt and pepper to taste

Mix all ingredients together and enjoy.
